There are many ways, e.g.: titanic[RightComposition[Select[#age > 65 &], SortBy[#age &]]], Query[SortBy[#age &]@*Select[#age > 65 &]][titanic], titanic[Select[#age > 65 &]][SortBy[#age &]], SortBy[titanic[Select[#age > 65 &]], #age &], Query[SortBy[#age &]@*Select[#age > 65 &]]@titanic.
