How do I choose between making afind the best fit or interpolating myline which passes through a series of data?

I have a list of data and want to create a function which passes through them.

Is there difference between the function created by curve fitting and one created by interpolation?

I'm new to Mathematica and don't know which approachhow to choosedo this work.
