Usually, the interpolation being done is only $C^1$ and cubic order, so the second derivative has jumps, and the fourth and higher derivatives are zero. Do you not have any derivative information available along with your points?

WeierstrassP[] and EllipticExp[] are two examples that come to mind; their second arguments are necessarily lists, so having them only be listable over the first argument is useful.
