Using Simon's answer I've got the gray color. I tried ColorSeparate: girl = Import[ "imgur.com/Q5ReXSX.jpg"; ] ; gray = RGBColor[0.8353856575309894`, 0.7865784222185629`, 0.7943977591036436`] ; ColorSeparate[ girl, gray ] but the syntax isn't right (RGBColor ... is an invalid color space specification.)

I was looking for a way to do it in the GUI. I'd tried selecting all the text, but only one cell's worth would select. I'd tried drawing a box with the mouse around the whole text region, but that didn't do it. I hadn't realized you could select those little cell tabs with the mouse.

The trouble with SaveDefinitions was because of how I was collecting my tabNumber variable. A better way is to use the second parameter of Dynamic as a callback, illustrated in: mathematica.stackexchange.com/a/41805/10
